SMOKING (BBQ style)
Just got myself a Weber Smokey Mountain.

Any WHO smokers here? Any tips for someone who can't cook anything that doesn't involve a microwave?

My grill is a pellet grill - basically food grade cat litter!

So, although I choose different wood types for the pellets, they make a difference only in flavour, not temperature or cooking times.

I use mostly oak and mesquite.

I do.

I've got a wood pellet burning Green Mountain Grill.

If you get into it, you're going to want to smoke a brisket after a while - It's the daddy cut of smoking meats.

These mofos take up to 16 hours on the grill, so you might want to get used to your grill before going for it.

When you're ready, I'd recommend http://www.turnerandgeorge.co.uk/ to supply the brisket.

You need a 'packer' cut brisket to do it properly. I found nearly all british butchers have absolutely no idea what that cut is, and they'll struggle to get it right. T&G on the otherhand, know exactly what they're doing.

Harry Soo says I should season it first and then do four or five smokes without food before using it properly.

Best stock up on coals and chips, I suppose.

use black oak wood chips the Louisina way. Take a whole piglet and soak in brine then slow cook overnight.

I was discussing this very subject with my Chef neighbor in the pub on Sunday.

He is threatening to get one (the Webber) for something like £60, so i will be keen to know how you get on.

Personally, I'm more keen on getting my own Tandor oven.

Got a Weber One Touch 57 in the summer, I may not be the best chef ever but I refuse to use gas.

Had grub from these smokers before though, fucking superb.
